Gourmet Meat Loaf 2 #s ground round, 3/4 # gr. veal, 1/2 # gr. pork - Mix together in mixer Mix following ingredients and add to meat mixture: 1 large onion chopped 12 large green pepper, chopped 2-3 ribs celery julienned 2-3 carrots " " " 2 cups fresh pureed tomatoes 3 tablespoons Lea & Perrins steak sauce 1 " " " French's mustard 1 tsp. finely ground black pepper 2 tsp. coursely ground black pepper 1 1/2 tsp. Kosher salt 2 eggs 3 tablespoons salad herb mix 3 " " " Italian fine bread crumbs This makes 2 small or 1 large loaf. Put 1/2 mixture in pan. sprinkle grated low fat mozarella cheese into middle. (1/4 -1/2 cup) in each pan ( if 2). Squeeze ribbons of Heinz catsup over grated cheese in middle of each loaf. Put other half of mixture into each pan. Press down into corners.
