~Pesto Shrimp and Scallops~


Baby Romaine Lettuce with Honey Ginger Baby Scallops and Fresh Bay Shrimp
4 heads baby romaine lettuce
2 Tbs honey
lime juice (from 1 lime)
1 Tbs ginger pesto
1/2 cup bay shrimp
1/2 cup bay scallops
pinch of salt & pepper
1 Tbs salad oil
GINGER PESTO
1/2 cup oil
1/2 tsp salt
1/4 cup ginger, minced
1/4 cup green onion, minced
1/4 cup cilantro, minced, lightly packed 1/8 tsp white pepper Combine all ingredients to make the pesto.
Marinate shrimp and scallops in honey, lime juice, pesto, salt and pepper for about 5 minutes. Heat oil in wok until smoking and add shrimp and scallops. Cook until just done - about 2 minutes. Pour over lettuce.>

Chicken Chili
2 Tbs light vegetable oil
1/2 cup diced onion
1/2 cup diced celery
1 Tbs minced garlic
1 lb boneless, skinless chicken thighs
2 Tbs chili powder
1 Tbs ground cumin
1 tsp oregano
1/4 cup tomato paste
1/2 cup canned tomatoes, chopped
1 tsp Hawaiian salt
1 tsp fresh ground pepper
1 - 8 oz can red beans
1 - 8 oz can pinto beans
1 - 8 oz can black beans
Heat oil in wok, add chicken salt, pepper, garlic, onion, carrot, celery and saute about 2 minutes. Add chili powder, cumin and oregano. Add tomatoes and tomato paste and beans. Let cook on low heat about 20 minutes.

This is a real quick recipe for donuts. One can of pillsbury biscuits. Confectioners sugar and or granulated sugar mixed with cinamon. One frying pan with oil of choice.Get your oil really hot and take your biscuits poke a hole in it put in frying pan until golden brown. Take the biscuits out and put on paper towels to drain.Next have a bowl to put sugar of choice or use to bowls for 2 kinds now dip your donuts and mmmmm eat them.

~Apple-Stuffed Pork Chops~

2 pork loin rib chops, cut 1 1/4 inches thick 1 T butter or margarine
2 T finely chopped onion
1/2 cup soft breadcrumbs
1/3 cup coarsely chopped apple
Dash pepper
1 T butter or margarine
2 t cornstarch
2/3 cup apple juice or apple cider
Cut an opening in each chop from the rib side, (patch says this is important) widening the pocket without cutting through to the other edge of the chop. Set aside.
For stuffing, in a medium saucepan cook onion in hot butter till tender. Remove from heat; stir in breadcrumbs, apple, and pepper. Fill pocket in each chop with an equal amount of stuffing. Place chops in an 8" square baking dish. Bake in a 325º oven for 45 to 55 minutes or till done.
For sauce, in a small saucepan melt 1 T butter; stir in cornstarch mixing well. Gradually stir in apple juice. Cook over medium heat till thickened and bubbly, stirring constantly. Serve sauce with chops. Makes 2 servings.

Hot Boiled Bacon Dressing
4 slices bacon
1/2 cup sugar
1/2 tsp. salt
1 tsp. cornstarch
1 beaten egg
1/4 cup vinegar
1 cup water
Fry bacon. In saucepan, put sugar, salt and cornstarch. Mix thoroughly. Add beaten egg and vinegar, mix well again. Add water, bacon (crumbled), and fat. Cook to desired thickness. Serve over dandelion greens or endive.

Dried Beef Spread

8oz dried beef, cut into very small pieces. 1 half cup mayo
1 half cup sour cream
1 quarter cup parmesan cheese
1 tbsp finely chopped parsley
6 chopped green onions
1 package cream cheese
Simmer the dried beef in water for several minutes and drain. Soften the cream in microwave on medium for 3 minutes. Stir in the rest of the ingredients and microwave on high for 6-8 minutes, stirring when halfway through. Serve on
your favorite snack crackers, or with crudites.

~PECAN PIE~



I can't believe no one has turned in a pecan pie recipe!! This is a stample of the south.
This is my Mother's Pecan Pie and it never fails to please.


1/2 cup butter or oleo

1 cup sugar

2 eggs, slightly beaten

3/4 cup white Karo syrup

1/4 teaspoon salt

1 teaspoon vanilla

1 cup chopped pecans

Your favorite pastry recipe...enough for one crust



. Prepare pastry and make an unbaked 9 inch pastry shell. Chill thoroughly. Cream butter (or oleo), add sugar gradually and cream together until ight and fluffy. Add remaining ingredients and blend well. Pour into pastry shell. Bake on lower shelf of a moderate oven (375° F.) 40 to 45 minutes.

1 CAN OF MILD ROTEL
     
2 CUPS OF FRESH SNAPPED GREEN BEANS/ OR

1 CAN OF GREEN BEANS.
                
2 CUPS OF DICED CARROTS
        
1 DICED LARGE POTATO
       
1 DICED LARGE RED ONION

(ADD CELERY AND/ OR CABBAGE IF YOU LIKE)

ADD 1 TO 2 LBS OF DICED CHICKEN AND
TWO CUPS OF RAW NOODLES.


*HINT -WHEN YOU DUMP THE CAN GOODS - DO NOT DRAIN - PUT THE JUICE AND ALL IN! THE POT.

BOLOGNA CONCOCTION



simple recipe take some baloney german or oscarmyer or what ever kind of baloney you like put it on a plate take some cottage cheese and put a couple of teaspoons of cottage in the the baloney and then roll the baloney up around the cottage cheese then eat its really good i'm serious try it.

  My recipe for~ CHICKEN PARMESAGNA~is:
 
 First: Take it out of the freezer.

Second:  Take dinner out of the box. Set                   tomato sauce aside.

Third:      Pull back plastic wrap over
                chicken.

Fourth:    Heat on high in microwave for 3                 minutes.

Fifth:    Add sauce packet. Heat entire                 dinner for 6 minutes.


It takes practice and patience, but in time you will all be able to learn it. Just kidding. I don't cook too much and I like it that way.
