BEFORE YOU BEGIN......

Be advised! This is a "guess-and-by-gollly" project!

There are no EXACT ingredient amounts. The SIZE of the batch and the and the use of spices and herbs can be adapted to suit your OWN special preference!

Flavor this concoction to your OWN taste...if you like your chili HOT, then MAKE it hot! But keep in mind...it's easier to ADD flavorings than to REMOVE 'em!

 

 

DO YOU HAVE THESE ITEMS IN YOUR KITCHEN?

1. A BIG stock-pot!
And it oughta be with an enamel finish. The tomatos in this concoction can react to a metalic surface.

2. A pressure-cooker!
Any would-be kitchen-freak has one! But if not, you're gonna need some additional kettles and pots...several of 'em!

3: A food-processor!
Now, I KNOW you have one of these. If not, you MUST have a blender. It won't be as good as the processor for this project, but you can get by with it.

 

 

OFF TO THE SUPER-MARKET!

 

FIRST STOP! THE BUTCHER COUNTER!

A stewing hen would be perfect, but they're difficult to find...so a plump fryer will suffiice.

 

BEEF and PORK are next.....

And HERE is where your pressure cooker comes into play! You can use CHEAPER cuts if you have one! Otherwise, you'd best pick the better grades.

You're gonna cube it anyhow, so whether you choose steaks or roasts is immaterial. Just get enough so you won't hafta SKIMP!

Why not plan to make a HUMUNGOUS batch? You can always freeze it....and it's GRAND to have on HAND!
