The ingredients you will need ...
• 8 ounces crab meat (or more)
• 1 1/2 cups bread crumbs
• 1 egg, beaten (might need another beaten egg)
• 2 or 3 tablespoons mayonnaise
• 2 tablespoons cocktail sauce
• 2 tablespoons minced green onion
• 2 teaspoons chopped fresh parsely, or 1/2 teaspoon dried parsley flakes
• 1/2 teaspoon dry mustard
• a dash or two of black pepper
• a dash of cayenne pepper
• salt to taste
• 1 1/2 cups crushed potato chips (reg. or BBQ)
• 1 teaspoon each (or to taste) of spices that you might use when you make Crab Cakes, like Old Bay and paprika, for example.
• cocktail sauce (or/and tartar sauce) for serving
• preheated 425° oven
Wash your hands, roll up your sleeves and get ready to work a little.
... In a large bowl, combine crab meat, bread crumbs, beaten egg, cocktail sauce (2 tbs.), mayo, green onions, parsley, dry mustard, salt (if desired), cayenne pepper, black pepper and any other spices you may have chosen.
... Mix well, cover, then chill in the fridge for 1 hour.
... Form chilled mixture into balls (or bites), using rounded teaspoon (or tablespoon, or hands). Roll crab bites in crushed potato chips. If mixture is too dry you might need to dip bites in an egg wash to get more crushed chips to stick.
... Place bites on baking sheet. Bake in preheated 425° oven for 10 to 12 minutes or until hot and nicely golden brown. A touch of cooking spray could help with that.
... Place on serving dish and serve with cocktail or/and tartar sauce (depending on what you think people like).
... Makes about 28-36 bites depending on what size you were able to make them. Get some of those tiny plastic forks for the serving area to add a festive, classy touch.
