Molasses Cookies
Preheat oven to 325
1.5 C. Shortening
2 C. Granulated Sugar
4 Tblsp. Molasses (light or dark)
3 Lg. Eggs
4 tsp. Soda
.5 tsp. Salt
4 C. Flour
1 tsp. Cinnamon
1 tsp. Ground Cloves
1 tsp. Vanilla (optional)
Mix shortening and sugar. Add eggs, soda, salt, cinnamon, cloves, vanilla, molasses.
Add flour ( .5 C at a time till mixed). Refrigerate for a few minutes to make easier to handle...roll teaspoon of dough in sugar and drop on pan ...cook 8-10 minutes or appx. 12 minutes if using an air bake pan. Makes appx. 6-7 dozen.

Peanut Butter Cookies
1 cup shortening
1 cup peanut butter
1 cup regular sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla
2 1/4 cups all purpose flour
2 teaspoons baking soda
1/4 teaspoon salt
Mix shortening and peanut butter with wooden spoon.Add both kinds of sugar. Stir until mixed. Stir in eggs and vanilla till mixed.
In another bowl stir together flour, soda, and salt. Stir into sugar mixture till well mixed. Use your hands to mix the dough, if you need to. Turn oven to 350 degrees.
Form dough into balls Put on ungreased cookie sheets. Fatten with a fork dipped into sugar in a criss cross design.
Bake for 10 to 12 minutes. Let cool on pan for 1 minute. Use pancake turner to put cookies on rack to finish cooling. Makes about 36 large cookies.

Snickerdoodles
3/4 cup sugar
1/2 cup butter
1 egg
1/2 teaspoon vanilla
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
2 tablespoons sugar
2 teaspoons ground cinnamon
Shortening
In a large bowl mix sugar and butter with a wooden spoon. Beat in the egg and vanilla.
In another bowl stir together flour, salt, baking soda, and the cream of tartar. Stir into the butter mixturetill wel mixed.
In a small bowl combine the 2 tablespoons of sugar and the cinnamon.
Oven at 375 degrees. Grease cookies sheet wit shortening. Shape dough into 1-inch balls: roll each in the sugar-cinnamon mixture. Put balls 2 inches apart on greased cookie sheet. Bake 8 to 10 minutes. Put cookies on rack to cool.
Makes about 36.
